Description

Alum (potassium aluminum sulfate) is commonly used to remove slime, clean, and firm up raw snails before cooking.
How to Use Alum to Wash Snails
  • Extract the snails: Remove snails from their shells by breaking the tip of the shell with a blunt tool or parboiling them in hot water for a few minutes.
  • Clean out debris: Discard the shell fragments, remove the intestines/gills, and open or slit the flesh to clean out the inner crevices.
  • Scrub with alum: Rub a piece of alum or powdered alum thoroughly over all parts of the snail to coagulate and strip away the thick slime. You can also soak them briefly in a bowl with hot water and alum crystals for about 10 to 15 minutes.
  • Rinse thoroughly: Wash the snails multiple times in clean, cool water to remove all traces of the alum and residual slime.
